Millet and grain salad with “Giardiniera” and lemon

The millet and grain salad with “Giardiniera” and lemon is a delicious and light dish, ideal as an appetizer or as a side dish. Quick to prepare, it can also be seasoned with other sauces or spices such as with balsamic vinegar and a few basil leaves.

Ingredients
  • salt
  • grain 20 g
  • millet 20 g
  • vegetable broth 250 ml
Preparation

Rinse with fresh water the millet and the grain, then cook them in the vegetable broth for 45 minutes. Once ready drain them and put them in a bowl: mix it with the drained “giardiniera” and season with the lemon juice, the lemon zest and a little oil and salt.
