Rubra means ‘red’ in Latin, and it gets its name from the bright red color of this sauce. Its origins date back to the late 19th and early 20th centuries in Central Europe, within the Austro-Hungarian cultural sphere. Rubra became popular in northern Italy—especially in regions like Piedmont, Lombardy, and Friuli Venezia Giulia—as a more gastronomic and natural interpretation of ketchup.
