The percoca peach tree is native to Asia, particularly China but is cultivated in many regions of the world for its sweet and fragrant fruit. In Italy this variety arrived by way of Persia and is now produced mainly in Campania, Basilicata, and southern Italy as well as lower Lazio and Romagna. Percoche peaches are usually yellow in color and are characterized by firm, juicy flesh. Very present in peasant tradition: the custom was to cut some percoche in red wine to take to the fields as a refreshing for workers or that dessert in harvest festivals. A tradition that still survives in some parts of Italy, so much so that “percoche in wine ” mark the beginning of summer.
