Black garlic is is the result of an aging process of common garlic through natural fermentation produced by lactic acid bacteria contained in the garlic itself. Fresh garlic is kept at controlled temperatures and high humidity for several weeks to promote the growth of bacteria that transform the garlic’s components, resulting in a black, soft bulb with a sweeter, more delicate taste than fresh garlic. Black garlic is found in Asian cuisine , and particularly in Japanese and Korean cuisine, but it tends to establish itself worldwide as a gourmet ingredient for its refined aroma.
